I hate to break it to you readers, but from the looks of things, Autumn is definitely on its way. Indeed, when I stuck my head out of Miss Cay Mansions this morning to watch a cat having a fight with a squirrel, there was a definite snap in the air.For me, this is no bad thing. I love this time of year, when the heat of Summer slowly fades into the crispness of Autumn, and I start dusting down my collection of gloves, scarves and winter cardigans. It's also the perfect opportunity to break out the huge and ancient pressure cooker pan formerly owned by my Nanna to make myself some soup.
I love this soup. It's light, slightly sweet and crunchy all at the same time. Plus, it takes hardly any time to throw together, and can be made with all the leftover bits and pieces which you may find tucked away at the bottom of your fridge or vegetable box. Whilst I've chosen to use rosemary here, it works just as well with thyme. Even better, you can just leave it to bubble away on the hob whilst you go and do something better instead - like read a good book, or purchase some of the lovely items we showcase here for example!
CARROT SOUPYou will need:
:: 2 tablespoons unsalted butter
:: 1 onion, sliced
:: 1 sprig of rosemary
:: 5 large carrots, peeled and thinly sliced
:: 1 teaspoon salt
:: 1 teaspoon pepper
:: 4 pints of chicken stock (obviously it would be good if you've made your own stock, but cubes work just as well)
:: 1 tablespoon chopped chives
Make It!
1) Toss the butter into a large pot set over medium-low heat. When butter has melted add the onion and rosemary. Continue cooking on medium-low heat for 10 minutes, stirring occasionally.
2) Add the carrots and cook for 5 minutes, stirring occasionally.
3) Pour in the stock and turn the heat to high. Bring to a boil and then reduce the heat, add the salt and pepper, and simmer for 30 minutes.
4) Serve with a sprinkling of chives, and some delicious fresh bread.

If we all stop talking about Autumn, it'll go away!
I made the choccie fudge recipe we featured way back in March (http://www.domesticsluttery.com/2008/11/sluttishly-easy-chocolate-fudge.html) and it is AMAZING! Its the easiest thing in the world to make (the hardest part is cutting it up and getting it out of the tray) and it tastes fab.
I made the oat and raisin cookies, twice - yummy. Also the mars bar cookies, I was told they looked like a road accident:/ They tasted good though.
Oh and the banoffee pie, toffee sauce leaked out all over the fridge:(
