Sluttishly Savoury: Salmon with Soba Noodles and Tahini Dressing


Fast food has one major association: bad, dirty, filthy, greasy. But there is another category of fast food: that being the healthy, salad-y smug fast food that is light and clean in its assembly as well as eating. There's a time and place for either, but important thing here is speed. This salmon with soba noodles falls into the latter and can be done in 20 minutes easily. I always seem to be starving when I get home. Quite often I am there lighting the gas rings and bashing around with saucepans before taking my coat off or turning any lights on. 

The flavours in dressing make this dish big in Asian flavour.  Soba noodles are made with buckwheat flour and offer a nice dense nuttiness - you can get them in supermarkets. 

Salmon with Soba Noodles and Tahini Dressing (serves two)
Preparation Time: 10mins
Cooking Time: 10mins
You will need:
  • a handful of soba noodles
  • a handful green beans or soya beans
  • 2 salmon fillets
For the dressing:
  • 1 spring onion
  • 1 tbsp tahini paste
  • 20ml soy sauce
  • 30ml sesame oil
  • 20ml white wine or rice vinegar
  • a handful of chopped peanuts if liked
Make it!
  1. Heat the oven to 200C. Boil the noodles with the green beans for 5 mins.
  2. Fry the salmon for a few minutes skin side down, then finish in the oven for a couple of further minutes. 
  3. Put the onion, tahini paste, soy sauce, sesame oil and the vinegar in a empty jam jar with a lid and shake up.
  4. Mix the dressing, beans and noodles and serve the salmon straightaway. Chopped peanuts are nice in it, as are sesame seeds if you have them in.
